Whole Wheat Jaggery Nankhattai / Cookies
Yet another lock down recipe! These healthy, crunchy, eggless cookies, are easy to make at home with basic ingredients found in the pantry. I have used powdered 'Jaggery' to sweeten these cookies. Jaggery is basically unrefined sugar obtained from concentrated sugar cane juice. It is prepared by boiling sugar cane juice till it solidifies.
Since we use whole wheat powder in this recipe it is a healthy alternative to the one made with all purpose flour. These cookies pairs well with a cup of hot tea! Do try it out!
Ingredients:
- Whole wheat flour/ Atta - 1.5 cups
- Baking powder -1/4 tsp
- Cardamom powder- 1/2 tsp
- Spice powder (carom, cinnamon , cloves) - 1/4 tsp (optional)
- Salt - 1/4 Tsp
- Jaggery powder, sifted - 1/2 cup
- Milk - 4 Tbsp
- Ghee - 1/2 cup
- Almonds - roughly chopped - 8 no.s
Instructions:
- Pre heat the oven to 350 degree F /175 degree C.
- Line a baking tray with parchment paper and keep it aside.
- Sift the jaggery powder and make sure no lumps are left.
- Add milk and ghee to the sifted jaggery and whisk it until fluffy. If you are using a hand whisk it might take 9-10 mins, but will take less time if an electric beater or stand mixer is used.
- In a bowl add all the dry ingredients from 1 - 4 listed in the ingredient category. Mix it until well cooperated.
- Now add the jaggery mixture to the dry mixture and keep mixing it until it forms a dough.
- Keep the dough covered for 15-20 mins.
- Using a rolling pin, roll the dough to 1/8 inch thickness.
- You may run a pizza cutter or a knife to cut the cookies into desired shapes.
- Garnish it with chopped almonds by giving it a gentle press so that it is well placed on each cookie.
- Transfer the cookies to the lined baking tray and bake it for 15 - 20 minutes. Do keep an eye on cookies once the baking process reach 15 minutes to check if they are ready.
- Let it cool completely before transferring it to an air tight container.
- Enjoy it with a cup of hot tea!
Jaggery should be sifted and have a lump-free consistency.
You may also use brown sugar if you are short of Jaggery.
I love spice powder (carom - cinnamon - clove). It is totally optional. Please feel free to omit it when you bake these cookies.
