Vegetable stew


Vegetable stew has a creamy texture, similar to a creamy soup. It goes well with Appam, Idiyappam, Chapathi and even bread. This stew is my favorite side dish with Appam:)
Ingredients:
  • Potato...................................2,cubed
  • Carrots.................................2, cubed
  • Green peas...........................1/2 cup, soaked overnight or use the frozen one
  • Onion...................................1, medium, thinly sliced
  • Green chilly..........................2, slit
  • Garlic....................................2 pods,chopped
  • Ginger...................................a small piece(1/2 inch), chopped
  • Coconut milk........................3/4 cup(thick)
  • Rice flour..............................2 tsp (mix it with the coconut milk)
  • Curry leaves..........................2 sprig
  • Whole cinnamon...................1-2
  • Cashew nuts.........................15 no:s
  • Golden raisins.......................10 no.s (optional)
  • Whole pepper........................1/2 tsp (6-8)
  • garam masala........................1 tsp
  • Ghee......................................1 tbsp(optional)
  • Oil..........................................1+ 1/2 tsp
  • Salt.........................................1-2 tsp / as required
  • Water......................................to boil the vegetables
Method:
  • Boil potatoes, carrots and greenpeas along with salt and water.Keep aside.
  • Heat a pan and add ghee, followed by oil. When it is warm, add pepper, cinnamon and cashewnuts.
  • Saute' and add raisins , if you are using them.
  • Now add curry leaves, ginger and garlic followed by sliced onion and chilly.
  • Once the onion turns brown, add the garam masala followed by boiled vegetables.
  • Let it boil for two minutes.
  • Now reduce the flame and add coconut milk- rice powder mix. Let it stand for a few minutes.
  • Before it boils remove from stove.
  • Enjoy with appam, idiyappam or chapathi.
Notes:
  • Coconut milk and ghee are high in calories, but they also significantly add to taste in this recipe. You can avoid ghee and reduce the quantity of coconut milk to make it healthier.
  • Rice flour is added to render a thick consistency to the stew.You can also sustitute rice flour with cashew paste.
  • Once the coconut milk is added, the flame should be reduced and once it start to boil, remove immedietly from flame.
